The history of the oldest distillery in Europe was born on July 4, 1518, when William of Pernštejn granted the right to distill to thirty-one house owners of Prostějov. Among those chosen was the owner of the house U Zeleného stromu, Hajný Jež of Seloutek. In the beginning, it was mainly beer that was brewed. Jež's successor, Jan Chytrovský, invested in innovations in the malt house and brewery room. Charles of Liechtenstein extended the privileged right of the owners of the taproom houses to a monopoly on the distilling and serving of liquor. Thanks to the privileges granted, the quality improved and Prostějov began to be rightfully referred to as the town with the best spirit.
